What's the point of serving steak that's tough and gristly ? Covering it up with seasoning doesn't negate the fact that it's like chewing a piece of gum; you eventually have to spit it out when the flavor is gone and it's tough and rubbery. The roast beef carving is a novel idea but it was almost cold and also dry.
